Pillot家族在原先是Chassagne村內葡萄酒桶的製造商，1900年Paul Pillot 的首任莊主Jean-Baptiste Pillot 在Chassagne-Montrachet 一小片葡萄園裡開啟了葡萄酒之路，他的兩個兒子Alphonse 和 Henri也參與其中，並於二戰後正式繼承葡萄園。兩兄弟開始著手裝瓶自己的葡萄酒、為酒莊打下了堅實的基礎。1967年，Henri的兒子Paul接手酒莊，Paul極具野心，不斷擴張酒莊的葡萄園版圖，相繼在Chassagne-Montrachet、Saint-Aubin和Santenay 收購葡萄園，目前已有約13公頃的面積。
如今，這片葡萄園已傳承給家族的第四代，Thierry和 Chrystelle。兩兄妹相信葡萄酒是在葡萄園釀造的，悉心照料葡萄永遠是釀造一瓶好酒的先決條件。他們在果園裡採有機種植，不使用除草劑和殺蟲劑，除此之外，Thierry在葡萄園管理上盡可能讓藤蔓生長得夠高，增加葉面的光合作用，讓葡萄有更佳的成熟度。
Thierry的釀酒方法自然而直接，致力於釀造出純淨、能表達風土的葡萄酒。他採取極少人工干預的方式進行釀造，不使用人工酵母。2011年開始他更推動了變革，在釀造過程中延長發酵時間並減少新橡木桶的使用（約20％），除此之外，Thierry還選擇300-500L的大橡木桶進行釀造，僅少部分提取橡木風味。Jasper Morris在Inside Burgendy提到Thierry釀造出的酒款「風格相當精緻，非常優雅且充滿活力！」。
Pillot家族穩扎穩打走過了一個世紀，2007年Thierry接手酒莊以後，更將Paul Pillot的品質推向了另一個高峰，許多酒評家都給予了極高的評價，如今已然是Chassagne村超實力的低調名家！
