Dauvissat 是Chablis最受追捧的酒莊之一，與Raveneau並列為Chablis產區兩大酒王，其2017年特級園Les Preuses被Vinous酒評評分100分滿分。

Vincent Dauvissat的祖父Robert於 1931 年首​​次將自己的葡萄酒裝瓶，當時酒莊僅擁有一級園La Forest 和 特級園Les Clos，加起來共 1 公頃的葡萄園。

從 1950 年開始，Vincent 的父親 René 通過購買和租賃特級園Les Clos、Les Preuses、一級園La Forest 和 Sechet來擴大家族酒莊。René和他的妻子 Madeleine經營酒莊時期，Dauvissat的名號逐漸被看見。

Vincent於 1979 年全職加入酒莊，並於 1989 年René退休後接任釀酒工作。

2002年開始酒莊實施自然動力法。

2013年，Dauvissat的第四代，Vincent的兒子Ghislain和女兒Etiennette，正式加入酒莊團隊，由Ghislain管理葡萄園，而 Etiennette 負責行銷和行政工作。而採收之後的釀造工作則由父子女三人一起進行。

如今酒莊的葡萄園面積達11公頃，包含特級園“Les Clos”（1.70 公頃）和“Les Preuses”（1 公頃），這兩款充滿礦物感的特級園白酒，需要在酒窖中至少存放 8 年才能展示其真正的魅力。

一級園的部分，除了最早擁有的“La Forest”（此酒至少需要 5 年的陳年）、另外有“Séchet”、以及“Vaillons”，自 2013 年起還擁有“Montée de Tonnerre”。
Dauvissat 的廣域級Chablis葡萄是出自與一級園相鄰的”La Forest”的地塊，產量極少，屬於難尋酒款，即使是廣域級仍可陳年 5-10 年或更久。

There is an abundance of Chablis character here with notes of iodine, algae, citrus and much more discreet nuances of mineral reduction along with hints of dried yellow orchard fruit. The silky yet entirely serious medium-bodied flavors exhibit plenty of minerality on the citrusy and hugely long finish that is clean, dry, long and balanced. This too offers dazzling aromatic purity but is even less expressive at the moment than the Preuses as the classic young Les Clos austerity is present in spades with tight, layered and elegant green fruit, oyster shell, iodine and white flower aromas that are cool and very primary, indeed even backward. The flavors are also quite understated and seem to be extracted directly from liquid rock as the minerality this displays is remarkable and there is a very different tactile sense in the mouth with simply tremendous buffering extract and staggering length on the ultra precise, bone dry and explosive finish. The 2017 Chablis Les Preuses Grand Cru is a stunning wine that embodies all of the best qualities of Chablis today. A grand, sweeping wine, the Preuses possesses dramatic concentration and richness. And yet it remains so Chablis, so Dauvissat and so Preuses. All of the classic Preuses signatures of citrus, slate, sage, crushed rocks and mint literally explode into a finish of palate-staining weight and intensity. Vincent Dauvissat adds that this was the last fruit he picked in 2017. "I waited until the very end,'" he told me. "The fruit just wasn't ready before."
